Vegan Poaches Egg
Ingredients
- ½ cup steamed broccoli florets
- ½ cup blanched asparagus
- ½ cup steamed Brussels sprouts (halved)
- ½ avocado, halved and filled with chopped sundried tomatoes or salsa
- A few cherry tomatoes or sun-dried tomatoes
- A handful of baby spinach or lettuce
- 2 slices of toasted whole grain or rye bread
- Pinch of salt and pepper
Instructions
- Steam broccoli, asparagus, and Brussels sprouts until just tender.
- Optionally sauté in olive oil with garlic for more flavor.
- Lightly toast the whole grain bread until crispy.
- Halve an avocado. Scoop out a bit of the center and fill with chopped sun-dried tomatoes or salsa.
- Gently scoop soft tofu to simulate egg white.
- Make a “yolk” mixture and place in the center. Season with kala namak for an eggy flavor.
- Arrange all veggies around a center “egg”. Add toast on the side.
- Garnish with pepper, herbs, olive oil, or nutritional yeast.
