Avocado Toast with Poached Egg

Ingredients

  • 1 slice multigrain seeded sandwich bread
  • ½ teaspoon vegetable oil
  • 1 egg
  • flaky sea salt to taste
  • freshly ground black pepper to taste
  • 2 pinches red pepper flakes
  • ½ ripe avocado
  • 1 wedge lemon

Instructions

  1. Toast bread on the highest setting until dark golden brown all over.
  2. Heat a small pan over medium heat. Brush oil onto the hot pan and crack in the egg.
  3. Sprinkle sea salt, black pepper, and pepper flakes on top. Cover and cook until whites are set and yolk is still runny, about 3 minutes.
  4. Scoop avocado onto the toast and spread evenly. Squeeze some lemon juice on top.
  5. Season with salt, black pepper, and red pepper flakes. Top with fried egg; pierce the yolk and spread it around. Cut avocado toast in half for optimal enjoyment.
